Grapefruit-Rosemary Mojito

It’s grilling weather where I am, so I was looking for something I could sip on the deck while cooking over the coals. The rosemary bush in my yard and the giant red grapefruits I bought at Whole Foods called to me, so I put them together in a variation on one of my absolute favorite warm-weather concoctions: the Mojito.

I ran out of sugar to make simple syrup, so for my second one I used strawberry syrup … which was also great! This is a like a light herbal soda with a rum kick. Enjoy the sun!

Ingredients:
1 1/2 oz white rum
1 oz simple syrup (or fruit-flavored syrup!)
1 oz fresh red grapefruit juice + several slices
2 sprigs fresh rosemary

Directions:
In a Collins glass, muddle the simple syrup, juice and rosemary. Add rum and then fill the glass with ice. Top off with club soda. Put grapefruit slices in the glass.
