Tomorrow is Bastille Day! In honor of French Independence Day, this week’s drink is the Champagne Cocktail. The Champagne Cocktail combines two of France’s best contributions to the world of booze – Champagne and Cognac! While the recipe says that the Cognac is optional, it really isn’t. The drink is much better with Cognac, but seriously, what isn’t? So, raise a toast to the French – Viva La France!

With Independence Day around the corner we felt this appropriately named cocktail made with American Gin distilled in Philadelphia fit the bill. The American Beauty is refreshing blend of Bluecoat gin, fresh lemon juice, raspberries and mint accentuates the seasonal bounty while paying homage to stars and stripes.

I love Mezcal, its just simply my favorite spirit to work with, drink and enjoy. Its smoky and rich flavors just dance all over my palate. Once again I was looking for a vegetable to pair it with then I had an aha moment and decided to use celery which I pureed (to get it out faster during restaurant service).
