dotw logoThis week we feature a new rum drink sent in by Jennifer. The mix of spiced rum, vanilla, coconut milk and nutmeg makes me think back to warm Caribbean afternoons siting on the beach and drinking one of these …

1 1/2 oz. Spiced Rum
3/4 oz. Vanilla syrup (like the kind used in coffee drinks)
3 oz. coconut milk
Dash of nutmeg (garnish)

Combine the rum, vanilla syrup, and coconut milk in a shaker with ice. Shake to blend. Strain and serve in a Collins or other tall glass filled with ice.

Garnish with nutmeg.

Delish!! Creamy and mild, with just a little spice.

Spiced Spiked Cider

dotw logoReader Maderia (kinda like the wine) wanted to share this warm holiday treat with everyone. The combination of spiced rum and apple cider conspire to warm your insides on a cold winter day.

Oh yeah, welcome to winter!

Spiced Spiked Cider

1 Part Captain Morgan’s Spiced Rum
3 Part Apple Cider
1 Lemon rind
squeeze of lemon (optional)
cloves
Cinnamon stick

Combine in pan bring to boil and serve in a footed mug with cinnamon stick and a garnish of lemon peel.

Bacardi Rum & Nut Cake

bacardi_rum_cake.jpgTurning through the Sunday paper I ran across this classic Holiday recipe for rum cake. Light, moist and full of Rum. Ooh, and a wonderful Rum glaze! What did you expect form the House of Bacardi?

Here’s the recipe for the Cake:

1/2 cup BACARDIĀ® Gold Rum
1 cup chopped pecans or walnuts
1 - 18 1/2 oz. package yellow cake mix
1 - 3 1/2 oz. package instant vanilla flavor pudding mix
4 eggs
1/2 cup vegetable oil
1/2 cup cold water
